Texas Pineapple Cake

Ingredients

Cake

• 3 eggs
• 2 cups granulated sugar
• 2 cups all-purpose flour
• 2 teaspoons baking soda
• 1/2 teaspoon salt
• 1 (20 ounce) can crushed pineapple, undrained
• 1/2 cup chopped nuts

Frosting

• 8 ounces cream cheese, softened
• 1 pound confectioners' sugar
• 4 tablespoons butter
• 1 teaspoon vanilla extract

Instructions

1. Cake: Mix together eggs and sugar.
2. Sift together flour, baking soda and salt. Add to egg mixture.
3. Add crushed pineapple and nuts.
4. Pour into greased and floured jellyroll (15 x 10-inch) pan.
5. Bake at 350 degrees F for 20 to 30 minutes.
6. Mix frosting and spread over cake while warm.
7. Frosting: Beat ingredients together until smooth.
