Peach Shortcake

This is a beautiful presentation, and it's delicious!


  • 2 cups flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 cup melted butter
  • 1 egg
  • Milk
  • Sliced, sweetened peaches (use fresh or frozen peaches)


  1. Heat oven to 350 degrees F. Grease and flour a 9-inch cake pan.
  2. Sift first 3 ingredients together.
  3. Put melted better and egg in a 1-cup measuring cup, then finish filling to 1 cup with milk. Add to flour mixture and beat well.
  4. Pour into prepared pan. Bake for 20 to 25 minutes. Cool.
  5. Split in half and put peaches between and on top of shortcake.
  6. Serve with ice cream and/or Cool Whip.
