Chocolate Creme de Menthe Cake

Ingredients

  • 1 (18.25 ounce) box white cake mix*
  • 7 tablespoons green creme de menthe liqueur
  • 1 (8 ounce) container Cool Whip, thawed
  • 1 can hot fudge topping

Instructions

  1. Mix cake according to package directions, except substitute 4 tablespoons green creme de menthe for the water. A small amount of green food coloring may be added now, if desired.
  2. Bake according to package directions and cool.
  3. Stir fudge topping before using. Frost cooled cake with fudge topping. Let sit for 10 minutes.
  4. Stir remaining 3 tablespoons creme de menthe into Cool Whip and mix well. Use this mixture to frost cake a second time. Refrigerate cake.
  5. The cake may be garnished with chocolate leaves or chocolate curls if desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
