Coco Ribe Cake

Ingredients

Cake

  • 1 (18.25 ounce) box deluxe white cake mix*
  • 1 small box instant vanilla pudding mix
  • 1/2 cup flake coconut
  • 1/2 cup vegetable oil
  • 1 cup water (room temperature)
  • 4 eggs
  • 1/2 cup Coco Ribe liqueur

Coco Ribe Icing

  • 1 small container whipped topping
  • 1/4 cup Coco Ribe liqueur
  • Toasted coconut

Instructions

  1. Grease and flour tube pan.

Cake

  1. Mix all ingredients together.
  2. Bake at 350 degrees F for 45 to 50 minutes.
  3. Let cool in pan 25 minutes.
  4. Finish cooling on wire rack.
  5. Ice and refrigerate overnight.

Coco Ribe Icing

  1. Blend whipped topping and liqueur well. Ice cake. Sprinkle with toasted coconut.
  2. Refrigerate overnight.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
