Easy Lime Daiquiri Cake

Ingredients

Cake

  • 1 (18.25 ounce) box Duncan Hines French Vanilla Cake Mix
  • 3 eggs
  • 2/3 cup water
  • 1/3 cup lime juice
  • 1/3 cup Crisco oil
  • 1/4 cup rum
  • 1 teaspoon grated lime peel
  • 3 drops green food coloring (optional)

Glaze

  • 1 1/4 cups granulated sugar
  • 1/3 cup lime juice
  • 1/4 cup rum
  • Whipped cream and twist of lime for garnish

Instructions

  1. Heat oven to 350 degrees F. Grease and flour a 10 inch Bundt or tube pan.

Cake

  1. Combine cake mix, eggs, water, 1/3 cup lime juice, oil, rum, lime peel and food coloring in a large bowl. Beat at medium speed with electric mixer for 4 minutes. Pour into pan.
  2. Bake at 350 degrees F for 45 to 50 minutes or until a wooden pick inserted in center comes out clean.
  3. Cool in pan for 20 minutes.
  4. Invert onto serving plate. Cool for 10 minutes.

Glaze

  1. Combine sugar, 1/3 cup lime juice and rum. Heat and stir until sugar dissolves.
  2. Poke holes in cake using skewer or long tined fork. Pour hot glaze slowly over top of cake. Cool.
  3. To serve, top each slice with whipped cream and a twist of lime, if desired.
