Sherry Cake

Ingredients

Cake

  • 1 (18 1/2 ounce) box yellow cake mix*
  • 1 small box vanilla instant pudding
  • 3/4 cup vegetable oil
  • 3/4 cup sherry
  • 4 large eggs

Glaze

  • 1 cup confectioners' sugar
  • 1/4 cup sherry

Instructions

Cake

  1. Mix together cake mix and pudding.
  2. Add oil and sherry and blend.
  3. Beat in eggs 1 at a time.
  4. Bake in Bundt pan at 325 degrees F for 50 minutes. Glaze if desired.

Glaze

  1. Mix sugar and sherry until smooth.
  2. While cake is still hot in the pan, drizzle 1/3 glaze over bottom of cake.
  3. Let cake cool and turn out onto plate.
  4. Pour remaining glaze over cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
