Wine Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 large box vanilla instant pudding
  • 4 eggs
  • 3/4 cup vegetable oil
  • 3/4 cup sherry wine
  • 1 teaspoon nutmeg

Glaze

  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons butter
  • 1/2 teaspoon rum flavoring

Instructions

Cake

  1. Combine all ingredients and mix well.
  2. Bake in greased and floured** tube or Bundt pan for 45 minutes at 350 degrees F.
  3. While still hot remove from pan. Sprinkle with confectioners' sugar or glaze.

Glaze

  1. Combine ingredients, except flavoring, in saucepan. Boil 5 minutes.
  2. Remove from heat; add flavoring and pour over cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
