Peach Up-Side Down Cake

Ingredients

  • 1/3 cup butter
  • 2/3 cup sugar
  • 2/3 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/3 teaspoon salt
  • 1 2/3 cups flour
  • 2 teaspoons baking powder
  • 1/3 cup butter
  • 1 cup light brown sugar
  • 1 1/2 cups sliced peaches

Instructions

  1. Cream 1/3 cup butter with 2/3 cup sugar.
  2. Add milk, eggs, vanilla extract and almond extract and mix well.
  3. Sift dry ingredients and add to creamed mixture. Beat well.
  4. For the peach mixture, place 1/3 cup butter and 1 cup brown sugar in heavy (cast iron) fry pan.
  5. Eat slowly and stir constantly until brown and melted.
  6. Add peaches.
  7. Cover with cake batter and bake in the frying pan at 350 degrees F for 25 minutes.

Makes 8 to 10 servings.
