Princess Diana's Wedding Cake

Ingredients

  • 1 1/4 cups vegetable oil
  • 3 eggs, beaten with mixer
  • 1 3/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 8 ounces crushed pineapple, with juice
  • 1 1/2 cups chopped bananas
  • 1 cup chopped apples
  • 3/4 cup coconut
  • 3/4 cup chopped nuts

Instructions

  1. Heat oven to 350 degrees F. Grease and flour the bottom of a 9 x 13-inch pan.
  2. Mix together the oil, eggs, sugar and vanilla extract.
  3. Sift the dry ingredients; add to mixture. Add remaining ingredients.
  4. Bake for 48 minutes.
