Ingredients
- 13 ounces smoked, fully-cooked beef sausage, cut into 1/2 inch slices
- 1 pound baby red potatoes, quartered
- 1 green bell pepper, sliced into 1 inch strips
- 1 red bell pepper, sliced into 1 inch strips
- 1 medium while onion, sliced
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning

Instructions
- Add red potatoes, bell peppers, and onion to a medium-size bowl. Toss vegetable mixture in olive oil, garlic, and Cajun seasoning.
- Place an 18 x 12 inch sheet of heavy-duty aluminum foil on a flat surface. Add 1/4 of the vegetable mixture to the center of the foil. Top vegetables with 1/4 of the sliced sausage (approximately 1 link each). Fold right and left edges in and roll together to close. Fold top and bottom edges in and roll to close the package. Repeat with remaining mixture for a total of 4 packets. (If cooking on a campfire, wrap foil packs with a second layer of foil to prevent bursting)
