Maple Creams

Ingredients

  • 1 cup maple sugar
  • 1 cup light brown sugar
  • 1/2 cup water
  • 1/2 teaspoon almond extract
  • Walnut meats

Instructions

  1. Cook the sugars and water to 240 degrees F, or to the soft-ball stage; add the almond extract.
  2. Cool to lukewarm, then beat until creamy, yet firm.
  3. Knead until smooth, form into small balls, and press a walnut meat into each ball.
