Orange Melts
Ingredients
- 1 1/3 cups fine vanilla wafer crumbs (about 5 ounces)
- 1/2 cup finely chopped pecans
- 1 cup confectioners' sugar
- 4 tablespoons undiluted orange juice concentrate
- 2 tablespoons Grand Marnier or Triple Sec
- 1/4 cup or more finely chopped pecans
Instructions
- Place a few wafers at a time in a blender or processor and pulse to make crumbs.
- Repeat until you measure the amount needed.
- Place the crumbs in a bowl. Add the 1/2 cup pecans and sugar. Mix well, mashing out lumps of sugar with the back of the spoon.
- Work in the orange concentrate, then the liqueur. Blend thoroughly.
- Oil your hands lightly, then shape balls of the dough, rolling a mounded soup spoon or tablespoon measure between hands.
- Roll the balls in the remaining 1/4 cup pecans, if desired.
- Place the candies on trays lined with wax paper.
- Cover loosely with wax paper and let ripen at room temperature overnight.
