Irish Potato Candy

Ingredients

  • 1 small potato
  • Confectioners' sugar
  • Peanut butter

Instructions

  1. Boil potato until tender. Peel off skin and mash.
  2. Add confectioners' sugar until a stiff dough is formed.
  3. Roll out on a sugared board until thin.
  4. Spread with peanut butter to cover the potato dough.
  5. Roll up like a jellyroll.
  6. Chill, then cut into thin slices.
