Coconut-Potato Fudge
Ingredients
- 3 medium size potatoes, peeled
- 4 tablespoons melted butter
- 1/2 pound shredded coconut
- 2 pounds confectioners' sugar
- 2 teaspoons vanilla extract
- 4 (1 ounce) squares sweet chocolate, melted
Instructions
- Cook potatoes until soft and rub through sieve or ricer.
- Add melted butter and confectioners' sugar. Mix together well and then add coconut and vanilla extract. Beat until creamy.
- Pour into a flat, buttered tin.
- When set, pour the chocolate over it. Let stand for 2 hours.
- Cut into squares.
