Smooth Peanut Butter Fudge

Yield: 36 squares

Ingredients

  • 1 (7 ounce) jar Marshmallow Creme
  • 1 cup smooth peanut butter
  • 1/2 cup butter
  • 4 cups confectioners' sugar
  • 1 (12 ounce) can evaporated milk
  • 1 teaspoon pure vanilla extract

Instructions

  1. Line a 13 x 9 inch pan with aluminum foil, leaving two edges overhanging for easier removal later. Set aside.
  2. Combine Marshmallow Creme and peanut butter and set aside.
  3. In a heavy bottom 4 quart saucepan over medium high heat, melt butter slightly, then add sugar and evaporated milk. Stir until mixture begins to boil. Turn heat down to medium, continuing to stir until candy thermometer reaches 234 degrees F (about 8 to 9 minutes).
  4. Remove from heat. Using a buttered spatula begin to add Marshmallow Creme and peanut butter mixture, a spoon full at the time, to the sugar mixture, working quickly Stir between adding with large wooden spoon until well blended. Add vanilla extract, stir well.
  5. Immediately pour peanut butter mixture into prepared dish. Cool on a cooling rack for 2 to 3 hours.
  6. Remove fudge from dish by picking up foil. Wrap in plastic wrap and store in a closed container.
