Luscious Lemon Truffles

Ingredients

  • 2 cups vanilla or white chips
  • 1 (10 ounce) jar Dickinson's lemon curd
  • 3 cups crushed vanilla wafers
  • 1 cup confectioners' sugar
  • 1 cup toasted flaked coconut or chopped pecans

Instructions

  1. Melt the chips until smooth. Stir in the curd, wafers and sugar.
  2. Chill until firm enough to handle.
  3. Roll into 1/2-inch balls and roll each ball into the coconut or pecans.
  4. Chill until firm.
