Pineapple Pickles
Ingredients
- 1 fresh pineapple
- 2 cups granulated sugar
- 2 cups water
- 1 cup vinegar
- 1 (2 inch long) cinnamon stick
- 2 to 4 whole cloves
- Dash of salt
Instructions
- Peel pineapple and cut crosswise into 1 inch thick slices. Remove core. Cut into sections about 1 inch wide. Mix sugar and water in saucepan. Add pineapple pieces; boil for about 10 minutes.
- Remove pineapple. To the syrup, add vinegar and spices. Boil until syrup is thickened. Add pineapple back into syrup; boil for about 5 minutes.
- Pour into sterilized jars and seal.
