Pineapple Pickles

Ingredients

  • 1 fresh pineapple
  • 2 cups granulated sugar
  • 2 cups water
  • 1 cup vinegar
  • 1 (2 inch long) cinnamon stick
  • 2 to 4 whole cloves
  • Dash of salt

Instructions

  1. Peel pineapple and cut crosswise into 1 inch thick slices. Remove core. Cut into sections about 1 inch wide. Mix sugar and water in saucepan. Add pineapple pieces; boil for about 10 minutes.
  2. Remove pineapple. To the syrup, add vinegar and spices. Boil until syrup is thickened. Add pineapple back into syrup; boil for about 5 minutes.
  3. Pour into sterilized jars and seal.
