Tamarind Marmalade


  • 1 quart tamarinds
  • 1 1/2 cups water
  • Granulated sugar, heated


  1. Simmer tamarinds in water until soft. Put through a sieve to remove fibers and seeds. Measure, then heat the pulp. For each cup of pulp add 1 cup of heated sugar. Simmer, stirring constantly, until the mixture thickens.
  2. Put mixture into sterilized glass jars, then seal with paraffin.
