Tomato-Candied Ginger Jam

Ingredients

  • 1 (28 ounce) can tomatoes
  • 1 1/4 cups granulated sugar
  • 1/2 lemon, quartered and sliced thin
  • 1/3 cup chopped candied ginger

Instructions

  1. Combine ingredients and cook over low heat until thick - about 2 to 3 hours. Stir occasionally to prevent sticking.
  2. Pour into sterilized jar and seal.
