Tomato-Candied Ginger Jam
- 1 (28 ounce) can tomatoes
- 1 1/4 cups granulated sugar
- 1/2 lemon, quartered and sliced thin
- 1/3 cup chopped candied ginger
- Combine ingredients and cook over low heat until thick - about 2 to 3 hours.
Stir occasionally to prevent sticking.
- Pour into sterilized jar and seal.
