Chow Chow

Chow Chow is made using late summer or early fall produce. This relish is a favorite in the South. It is excellent on hot dogs.

Chow Chow

Yield: 4 quarts

Ingredients

  • 4 cups chopped purple or green cabbage
  • 2 cups chopped onion
  • 2 cups chopped green, red or orange bell peppers
  • 2 cups chopped green tomatoes
  • 1/2 cup salt
  • 8 cups water
  • 3/4 cup granulated sugar
  • 3 tablespoons mustard seed
  • 4 cups vinegar

Instructions

  1. Wash all vegetables thoroughly.
  2. Peel onions, and remove seeds and white membrane from bell peppers.
  3. Chop all vegetables and measure.
  4. Dissolve salt in 8 cups water. Pour over vetables. Let stand for one hour.
  5. Drain and taste. If too salty, rinse again.
  6. Mix vegetables with sugar, mustard seed and vinegar. Simmer for 20 minutes, then bring to a full boil.
  7. Pack, boiling hot, into hot quart jars and seal immediately.
