Nacho Casserole


  • 1 pound ground beef
  • 1 cup corn kernels frozen, fresh or canned
  • 2 cups crushed tortilla chips, divided
  • 2 cups shredded Monterey jack cheese divided
  • 1 (12 ounce) jar chunky salsa
  • 3/4 cup Miracle Whip salad dressing
  • 1 tablespoon chili powder


  1. Heat oven to 350 degrees F.
  2. Brown ground beef and drain.
  3. Stir in salsa, corn, dressing and chile powder.
  4. Layer 1/2 of each the meat mixture, chips and cheese in a 2-quart casserole.
  5. Repeat layers.
  6. Bake for 20 minutes or until thoroughly heated.
  7. To serve, top with shredded lettuce and chopped tomatoes if desired.
