Sweet Baby Ray's Stuffed Green Peppers

Ingredients

  • 4 medium green bell peppers
  • 2 pounds ground beef
  • 1/4 cup finely chopped onion
  • 1/2 cup bread crumbs
  • Fresh crushed black pepper to taste
  • 1 cup cooked white rice
  • 12 ounces Sweet Baby Ray's BBQ Sauce, divided
  • 1 teaspoon fresh minced garlic

Instructions

  1. Cut bell peppers in half lengthwise. Remove seeds and boil for 10 minutes.
  2. Remove peppers from water, and let cool.
  3. In large bowl mix remaining ingredients except 1 ounce of Sweet Baby Ray's BBQ sauce.
  4. Divide ground beef mix into 8 equal portions and stuff green peppers.
  5. Place peppers on a baking sheet in conventional oven set at 350 degrees F for 35 minutes.
  6. After 35 minutes, remove excess grease from each pepper.
  7. Top with 1 ounce of Sweet Baby Ray's BBQ Sauce; continue baking 10 more minutes.
