Sweet Baby Ray's Stuffed Green Peppers
Yield: 8 servings
Ingredients
- 4 medium green bell peppers
- 2 pounds ground beef
- 1/4 cup finely chopped onion
- 1/2 cup bread crumbs
- Fresh crushed black pepper to taste
- 1 cup cooked white rice
- 12 ounces Sweet Baby Ray's BBQ Sauce, divided
- 1 teaspoon fresh minced garlic
Instructions
- Cut bell peppers in half lengthwise. Remove seeds and boil for 10 minutes.
- Remove peppers from water, and let cool.
- In large bowl mix remaining ingredients except 1 ounce of Sweet Baby Ray's BBQ sauce.
- Divide ground beef mix into 8 equal portions and stuff green peppers.
- Place peppers on a baking sheet in conventional oven set at 350 degrees F for 35 minutes.
- After 35 minutes, remove excess grease from each pepper.
- Top with 1 ounce of Sweet Baby Ray's BBQ Sauce; continue baking 10 more minutes.
