Taco Rice Casserole

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1 envelope taco seasoning or 2 tablespoons homemade Taco Seasoning
  • 1 1/2 cups water
  • 8 ounces tomato sauce
  • 3 cups cooked rice
  • Velveeta cheese
  • Taco chips

Instructions

  1. Brown ground beef, onion and bell pepper.
  2. Drain excess fat.
  3. Add taco seasoning and water and cook for 5 minutes.
  4. Add tomato sauce and cooked rice and spoon into a 9 x 13 inch baking dish.
  5. Top with slices of Velveeta cheese.
  6. Bake at 350 degrees F until it bubbles.
  7. Immediately before serving, add broken taco chips to top of casserole.
  8. Serve with chopped lettuce, chopped tomatoes, taco sauce or salsa and black olives.
