Taco Rice Casserole
Ingredients
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1 envelope taco seasoning or 2 tablespoons homemade Taco Seasoning
- 1 1/2 cups water
- 8 ounces tomato sauce
- 3 cups cooked rice
- Velveeta cheese
- Taco chips
Instructions
- Brown ground beef, onion and bell pepper.
- Drain excess fat.
- Add taco seasoning and water and cook for 5 minutes.
- Add tomato sauce and cooked rice and spoon into a 9 x 13 inch baking dish.
- Top with slices of Velveeta cheese.
- Bake at 350 degrees F until it bubbles.
- Immediately before serving, add broken taco chips to top of casserole.
- Serve with chopped lettuce, chopped tomatoes, taco sauce or salsa and black olives.
