Taco-Rice Casserole

Ingredients

  • 1 pound ground beef
  • 1 envelope taco seasoning mix or 2 tablespoons homemade Taco Seasoning
  • 3 cups rice, cooked
  • 1 can stewed tomatoes
  • Shredded cheese
  • 1 cup sour cream
  • 1 cup stuffed green olives

Instructions

  1. Brown beef, then drain fat.
  2. Add taco seasoning and stewed tomatoes to beef.
  3. Put meat mixture into a casserole dish.
  4. Top meat mixture with rice.
  5. Sprinkle with shredded cheese and bake at 350 degrees F until cheese is melted.
  6. Serve with sour cream and green olives.
