Chicken Noodle Casserole
Ingredients
- 1/2 cup chopped onions
- 3 tablespoons butter, melted
- 2 cans cream of chicken soup
- 2 cups shredded Cheddar cheese, divided
- 1 cup milk
- 3 1/2 cups chopped cooked chicken (canned or rotisserie)
- 1 package egg noodles, cooked
- Salt
- Pepper
- 1 can peas, drained (optional)
- 1 sleeve Ritz crackers, crumbled
Instructions
- Heat oven to 350 degrees F. Grease a 2 1/2 quart casserole.
- In a large skillet over medium-high heat, sauté onions in butter until onions are tender.
- Add soup and 1 1/2 cups cheese; gradually stir in milk.
- Cook over medium heat until cheese melts; stir in chicken and egg noodles, salt, pepper and peas, if using.
- Transfer mixture to the prepared casserole; sprinkle with cracker crumbs.
- Bake for 30 minutes or until heated through.
- Top with remaining 1/2 cup cheese and bake for 5 minutes or until cheese melts
