Cheddar Parmesan Potatoes

Yield: 6 to 8 servings

Ingredients

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1 cup shredded Cheddar cheese
  • 1/2 cup Parmesan cheese
  • 5 cups sliced, cooked and peeled potatoes
  • 1/4 cup bread crumbs

Instructions

  1. In a saucepan, melt butter over low heat. Stir in flour until smooth. Gradually add milk; cook and stir over medium heat until mixture thickens. Remove from heat and add salt and cheeses. Stir until Cheddar cheese melts.
  2. Place potatoes in a greased 2 quart baking dish and add cheese mixture, stirring gently to mix. Sprinkle bread crumbs on top.
  3. Bake uncovered at 350 degrees F for 30 to 35 minutes.
