Crunchy Sweet Potato Casserole



  • 5-6 sweet potatoes, mashed
  • 1/2 cup butter, melted
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 eggs, lightly beaten
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg


  • 1 cup crushed cornflakes
  • 1/2 cup chopped walnuts
  • 1/4 cup packed brown sugar
  • 1/4 cup butter, cubed


  1. Heat oven to 375 degrees F.
  2. In a large bowl, combine mashed sweet potatoes, melted butter, sugar, brown sugar, beaten eggs, milk, cinnamon and nutmeg. Spoon into a greased 1 1/2-quart baking dish. Bake, uncovered, 20 minutes.
  3. In a small bowl, combine crushed cornflakes, walnuts, brown sugar and cubed butter. Sprinkle over potato mixture.
  4. Bake again for 5-10 minutes or until topping is lightly browned.
