Amy Ruth's Home-Style Southern Cuisine Potato Soufflé

Ingredients

Potatoes

  • 4 cups mashed sweet potatoes
  • 4 tablespoons butter (1/2 stick)
  • 2 eggs, lightly beaten
  • 1/2 cup brown sugar
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup milk

Topping

  • 1/3 stick margarine
  • 1 cup brown sugar
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1/3 cup all-purpose flour

Instructions

  1. Heat oven to 350 degrees F.

Potatoes

  1. Mix all ingredients in a mixing bowl. Beat the mixture until fluffy. Pour into buttered baking dish. Sprinkle with topping.

Topping

  1. Mix all ingredients. Bake at 350 degrees F for 35 to 40 minutes.
