Apple Jack Orchard Cornish Game
Hens with Raspberry Sauce

Ingredients

  • 4 whole Cornish game hens
  • 1 teaspoon cumin
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1 cup raspberries
  • 1/4 cup sherry
  • 1/4 cup soy sauce
  • 1 teaspoon garlic powder
  • 1 cup water

Instructions

  1. Season hens by rubbing mixture of spices on skin.
  2. Roast on rack in pan at 350 degrees F for 30 minutes.
  3. Combine berries, sherry soy sauce and garlic powder to baste hens. Add water to pan; cover with oiled foil or pan cover and bake for 45 minutes to one hour more.
  4. Drain liquid. Reduce hen juices; baste again before serving.
  5. Serve with pan juices over rice.
