Ingredients

  • 2 cups milk
  • 1/8 cup granulated sugar
  • 3 1/2 ounces butter
  • Zest of 3 oranges
  • 1 vanilla bean, split and scraped
  • pinch of salt
  • 1 1/2 cups + 1 tablespoon all-purpose flour
  • 5 eggs, whisked

Instructions

  1. Bring the first six ingredients to a boil. Add flour all at once and cook over medium heat until it becomes a smooth mass and the bottom of the pan is slightly browned.
  2. Transfer dough to a mixer and beat on low speed with the paddle attachment. Add eggs slowly until incorporated.
  3. Divide dough into 1/2 ounce balls and fry in oil at 350 degrees F for 8 minutes.
