Blue Bayou Caramelized Pecan Salad Topping
- 16 ounces pecans
- 6 ounces butter
- 8 ounces brown sugar
- .05 ounce cayenne pepper
- Roast pecans in a preheated 350 degrees F oven for about 15 minutes or until roasted.
- Separately place skillet over stove and melt butter. Add brown sugar and cook
until sugar is dissolved. Stir constantly to emulsify sugar and butter, add cayenne
pepper and pecans. Coat them well.
- Place pecans on a cookie sheet and let cool.
