Blue Strawberry Tuscan Ham on Flatbread

Yield: 1 sandwich

Ingredients

  • Flatbread, cut to sandwich size (about 3 x 4 inches)
  • 1 slice smoked Gouda cheese
  • 1 slice Cheddar cheese
  • 2 tablespoons Parmesan-Herb Mayo
  • 3 ounces Cure 81 ham
  • 1 ounce red pepper strips

Instructions

  1. Place slice of Gouda and Cheddar cheese on each flatbread slice. Spread Parmesan-Herb Mayo on cheese slices. Add ham and then red pepper strips. Microwave for 20 seconds and then grill on the panini grill for about 3 minutes, or until done.
  2. Parmesan-Herb Mayo: Combine 3 cups mayonnaise, 1 cup Dijon mustard, 2/3 cup shredded Wisconsin Parmesan cheese and 2 teaspoons dried Italian seasoning.
