Bravo Ristorante Italiano Penne al Salmone

Ingredients

  • 1 pound penne pasta
  • 1 (12 ounce) filet of salmon, cut into cubes
  • 2 shallots, chopped
  • 1 cup peas
  • 1 tomato, diced
  • 1 ounce vodka
  • 1/2 ounce vegetable stock
  • 1 1/2 ounces cream
  • 1/2 ounce butter
  • Salt and pepper to taste

Instructions

  1. Cook the pasta for 11 minutes.
  2. While the pasta is cooking, place shallots and butter in sauté pan and sauté for 1 to 2 minutes.
  3. Add salmon and sauté for an additional 4 minutes.
  4. Add vodka, vegetable stock, cream, salt and pepper. Cook sauce until reduced.
  5. Add pasta, peas and tomatoes and cook for 2 to 3 minutes.
  6. Serve immediately.
