Brewed Awakenings Walnut Buttermilk Waffles

Ingredients

  • 7 large eggs
  • 1 cup whole milk
  • 2 cups reduced-fat buttermilk
  • 3/4 cup vegetable oil
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 cup walnuts
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg

Instructions

  1. Crack eggs into large mixing bowl. If people are watching, crack eggs one-handed, preferably two eggs per hand at the same time. Add milk, buttermilk and oil. Whisk mix with great intensity for 1 minute, infusing as much air as possible to the mixture. Relax arm with short vigorous shakes and a quiet groan.
  2. Now add wet ingredients to large bowl containing flour, salt, baking soda and baking powder. Mix only until all is wet - lumps will remain. That's okay and good.
  3. In food processor, quickly blend walnuts, sugars, cinnamon and nutmeg. Process until nuts are minced up real good. Fold nut mixture into egg mixture, then stop. Remember - lumps are good.
  4. Use your grandmother's waffle iron for best results. Prepare as directed by waffle iron manufacturer.
  5. Serve hot with real Wisconsin butter and real Wisconsin maple syrup.
