Brewed Awakenings Walnut Buttermilk Waffles
Yield: 10 servings
Ingredients
- 7 large eggs
- 1 cup whole milk
- 2 cups reduced-fat buttermilk
- 3/4 cup vegetable oil
- 4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 1 cup walnuts
- 1/2 cup granulated sugar
- 1 cup packed brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
Instructions
- Crack eggs into large mixing bowl. If people are watching, crack eggs one-handed, preferably two eggs per hand at the same time. Add milk, buttermilk and oil. Whisk mix with great intensity for 1 minute, infusing as much air as possible to the mixture. Relax arm with short vigorous shakes and a quiet groan.
- Now add wet ingredients to large bowl containing flour, salt, baking soda and baking powder. Mix only until all is wet - lumps will remain. That's okay and good.
- In food processor, quickly blend walnuts, sugars, cinnamon and nutmeg. Process until nuts are minced up real good. Fold nut mixture into egg mixture, then stop. Remember - lumps are good.
- Use your grandmother's waffle iron for best results. Prepare as directed by waffle iron manufacturer.
- Serve hot with real Wisconsin butter and real Wisconsin maple syrup.
