Cream Puffery Pastry Shop & Cafe Puerco Asado

It's excellent served with port wine gravy, black beans and rice.

Yield: 6 to 8 servings

Ingredients

Mojo

  • 1 head garlic, peeled
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 tablespoon salt
  • 1/4 cup key lime juice

Pork

  • 1 (2 1/2 pound) pork sirloin, shoulder or leg roast

Instructions

Mojo

  1. Place all ingredients in a food processor and grind to a smooth paste.
  2. Heat oven to 400 degrees F.

Pork

  1. Slather pork with mojo. Marinate in refrigerator for at least 2 hours to overnight.
  2. Place pork with mojo (do not try to discard) in roasting pan. Put into oven for 15 minutes.
  3. Lower heat to 325 degrees F; allow pork to roast until an internal temperature of 170 degrees F is reached, approximately 30 to 40 minutes.
  4. Rest roast for 10 minutes.
  5. Slice and serve.
