Dante Club Pasta Rafael


  • 2 jars marinated artichoke hearts
  • 1/2 cup olive oil
  • 2 cups chopped onions
  • 2 tablespoons minced garlic
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 tablespoon black pepper
  • Dried red pepper flakes (pinch)
  • 1 (28 ounce) can plum tomatoes
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped parsley
  • 1 pound pasta of choice
  • 1/2 cup sherry or red wine (optional)


  1. In medium pot, heat olive oil then add onions and garlic.
  2. Sauté until onions and garlic take on a little color.
  3. Add wine, if desired. Add oregano, basil, salt, sugar, black pepper and dried red pepper flakes. Mix.
  4. Add tomatoes and artichoke hearts. Simmer on low for about 2 hours.
  5. Prepare pasta according to package directions.
  6. Garnish with parmesan cheese and parsley.
