Durant's Chocolate Creme Brulee

Ingredients

  • 18 ounces heavy cream
  • 3 ounces granulated sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 ounces semisweet chocolate, finely chopped
  • 5 egg yolks, well beaten

Instructions

  1. Mix cream, sugar, vanilla extract and salt in a heavy pot; bring to a boil. Remove from heat.
  2. Add chocolate; stir until completely melted.
  3. Slowly add mixture to eggs, whisking vigorously until combined
  4. Pour water halfway up ramekin sides in a baking dish. Fill ramekins almost full with mixture. Cover with foil; poke vents.
  5. Bake for 30 minutes at 325 degrees F until almost set, then uncover. Bake for 5 more minutes.
  6. Refrigerate for 4 hours.
