Eddie's Grill Jicama Slaw
This is a favorite at Eddie's Grill, Phoenix, Arizona.
Yield: 4 servings
- 3/4 cup snow peas, julienned
- 3/4 cup jicama, julienned
- 1/2 cup carrots, julienned
- 2 tablespoons cilantro, chopped
- 1/4 cup green cabbage, shredded
- 1/4 cup red cabbage, shredded
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 1/2 tablespoons aged rice wine vinegar
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- In a large bowl combine all of the ingredients and mix well.
