Fetch's Famous Roasted Half Lemon Chicken

Ingredients

  • 2 cups lemon juice
  • 1/2 cup honey
  • 2 tablespoons garlic, minced
  • 1 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoons oregano
  • 1 chicken
  • Salt and pepper to taste

Instructions

  1. Heat oven to 400 degrees F.
  2. Combine lemon juice, honey and garlic, mix thoroughly.
  3. Combine olive oil and vinegar. Add oil and vinegar to lemon juice mixture, whisking rapidly.
  4. Add oregano, salt and pepper.
  5. Season chicken with salt and pepper.
  6. Coat chicken with lemon dressing and roast for one hour.
