Fleming's Prime Steakhouse Velvet Chocolate Cake

Ingredients

Cake

  • 1 pound butter
  • 1 cup granulated sugar
  • 6 ounces coffee
  • 2 ounces Frangelico or other liquor
  • 1 pound semisweet chocolate
  • 8 eggs
  • 1 teaspoon vanilla extract

Ganache

  • 6 1/2 ounces semisweet chocolate
  • 5 1/2 ounces heavy cream

Cherry Sauce

  • 1 cup sweet dried cherries
  • 2 cups red wine
  • 1 teaspoon powdered sugar

Instructions

Cake

  1. Melt chocolate and butter in a double boiler.
  2. Combine sugar, coffee, vanilla extract and liqueur in a large bowl.
  3. Add melted chocolate and butter to coffee mixture.
  4. Whisk eggs until well mixed and add to chocolate mixture. Mix well.
  5. Pour into a buttered and plastic wrap-lined 9 inch cake pan.
  6. Bake in a water bath in a 300 degrees F oven for 1 hour.
  7. Remove from oven and chill for at least 2 hours before unmolding.
  8. Place cake upside down on a wire rack and cover with ganache.
  9. Chill for 30 minutes then top with Cherry Sauce before slicing.

Ganache

  1. Mix together in a double boiler until chocolate is completely melted.

Cherry Sauce

  1. Mix wine with sugar and reduce by half in a saucepan over medium heat.
  2. Add cherries and blend together.
