Spinach & Mushroom Quiche

Ingredients

  • 1 pie shell
  • 1 box frozen spinach, thawed and liquid squeezed out
  • 4 ounces sliced mushrooms
  • 1/2 medium onion diced
  • 2 tablespoons oil
  • 3 eggs
  • 1 cup cream
  • Salt, pepper, and nutmeg to taste
  • 1 cup grated asiago or parmesan cheese

Instructions

  1. Pre-bake the pie shell and cool.
  2. Sauté the onion and mushroom in oil.
  3. Add the salt, pepper, and a touch of nutmeg.
  4. Beat eggs with cream.
  5. Season with salt and pepper.
  6. Put filling and egg mixture into shell.
  7. Bake 45 minutes at 350 degrees F.
