Furr's Cafeteria Fruit Punch Gelatin Salad

Ingredients

  • 3 (3 ounce) boxes mixed fruit gelatin
  • 3 cups boiling water
  • 2 1/2 cups cold water
  • 1 (14.5 ounce) can fruit cocktail, drained
  • 1 cup flaked coconut
  • 1 cup miniature marshmallows

Instructions

  1. Place gelatin in a mixing bowl.
  2. Add 3 cups boiling water, stir to dissolve gelatin.
  3. Place the 2 1/2 cups cold water in gelatin and blend thoroughly.
  4. Pour 1 cup of gelatin into small bowl and set aside, but do not chill.
  5. Place gelatin in a serving dish or 13 x 9-inch pan.
  6. Chill gelatin until soft set.
  7. When gelatin is soft-set, remove from refrigerator.
  8. Place fruit cocktail that has been drained, on top of gelatin.
  9. Sprinkle coconut on top of fruit cocktail.
  10. Place marshmallows on top of all and arrange evenly.
  11. Press all very lightly with a spoon.
  12. Pour the reserved liquid gelatin mixture on top of marshmallows.
  13. Place gelatin back into the refrigerator until the salad is completely set.
