Harvey House Chicken Cacciatore

Ingredients

  • 2 whole chickens
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup butter or olive oil
  • 1 medium onion, sliced
  • 1/2 pound fresh mushrooms, sliced
  • 1 clove garlic, minced
  • 12 ripe olives, whole
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup chicken stock

Instructions

  1. Cut chicken in quarters; dust with mixture of flour, salt and pepper.
  2. Sauté in butter or olive oil until golden brown.
  3. Add remaining ingredients, cover and simmer over low heat for 20 to 30 minutes.
