Harvey House Chicken Cacciatore
Yield: 8 servings
Ingredients
- 2 whole chickens
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup butter or olive oil
- 1 medium onion, sliced
- 1/2 pound fresh mushrooms, sliced
- 1 clove garlic, minced
- 12 ripe olives, whole
- 1 (15 ounce) can tomato sauce
- 1/2 cup chicken stock
Instructions
- Cut chicken in quarters; dust with mixture of flour, salt and pepper.
- Sauté in butter or olive oil until golden brown.
- Add remaining ingredients, cover and simmer over low heat for 20 to 30 minutes.
