Johnny Rivers' Smokehouse Greens

Yield: 20 servings

Ingredients

  • Rendered pork fat
  • 1 pound bacon or other cut of pork, chopped
  • 2 large onions, chopped
  • 2 bunches collard greens, stems removed and greens chopped
  • 1 teaspoon black pepper
  • Salt to taste
  • 1 quart chicken stock

Instructions

  1. Add rendered fat to a large saucepan.
  2. Add pork and onions to pan.
  3. Add chopped greens and season with salt and pepper.
  4. Finish with chicken stock.
  5. Cover pan and let cook for 25 minutes over medium heat.
