McGill's Restaurant Pasta with Maine Lobster

Ingredients

  • 1 1/2 cups mixed pasta
  • 1/2 cup sliced mushrooms
  • 2 tablespoons compound butter
  • 1 teaspoon garlic
  • 1 tablespoon lobster base
  • 1/2 cup langostinos
  • 1/2 cup lobster meat
  • 1 pint heavy cream
  • 2 ounces Madeira
  • 1/2 cup Parmesan cheese
  • 1 lobster claw

Instructions

  1. Cook lobster claw in simmering water.
  2. In a medium sauté pan, cook mushrooms, garlic, lobster base, langostinos and slipper meat, in compound butter until softened.
  3. Deglaze pan with Madeira.
  4. Add heavy cream and reduce by one-third.
  5. Add Parmesan cheese. Add mixed pasta and toss to coat. Cook until incorporated.
  6. Serve in heated bowl garnished with Parmesan cheese, chopped parsley and lobster claw.
