McGill's Restaurant Pasta with Maine Lobster
Ingredients
- 1 1/2 cups mixed pasta
- 1/2 cup sliced mushrooms
- 2 tablespoons compound butter
- 1 teaspoon garlic
- 1 tablespoon lobster base
- 1/2 cup langostinos
- 1/2 cup lobster meat
- 1 pint heavy cream
- 2 ounces Madeira
- 1/2 cup Parmesan cheese
- 1 lobster claw
Instructions
- Cook lobster claw in simmering water.
- In a medium sauté pan, cook mushrooms, garlic, lobster base, langostinos and slipper meat, in compound butter until softened.
- Deglaze pan with Madeira.
- Add heavy cream and reduce by one-third.
- Add Parmesan cheese. Add mixed pasta and toss to coat. Cook until incorporated.
- Serve in heated bowl garnished with Parmesan cheese, chopped parsley and lobster claw.
