Mel's Diner Chicken Cilantro Soup

  • 4 cooked chicken breasts or 4 cups chopped chicken
  • 2 cans chicken broth
  • 2 cans chopped tomatoes
  • 4 tablespoons chopped fresh cilantro
  • 1 medium onion, sliced in rings and sautéed in butter
  • 1/2 teaspoon black pepper
  • Taco chips, crushed
  • Monterey Jack cheese, grated


  1. Bring chicken, chicken broth, tomatoes, cilantro, onion and black pepper to a boil. Simmer for 45 minutes to 1 hour.
  2. Serve soup over a thin layer of crushed taco chips in bottom of soup bowl.
  3. Sprinkle Monterey Jack cheese over the top.
