Yield: 8 servings

Ingredients

  • 8 club sandwiches*
  • 4 cups medium white sauce**
  • 1/2 pound grated sharp cheese ***
  • 8 (1 ounce) slices American cheese
  • 8 jumbo stuffed olives or 16 slices crisply cooked bacon

Instructions

  1. Place sandwiches on individual ovenproof serving plates.
  2. Ladle 6 tablespoons cheese sauce over each.
  3. Top each with slice of cheese and insert a wooden center.
  4. Place under preheated broiler about 4 inches from heat source just until it begins to bubble and brown, 2 to 3 minutes.
  5. Top each wooden th olive or crisscross bacon slices.

Notes

* At Miller and Rhoads Tea Room, the sandwich layers were: toast, turkey, Virginia ham, about 2 tablespoons of cheese sauce, toast, turkey, Virginia ham, tomato, toast.

** When white sauce is thickened and smooth, stir in grated cheese until melted.

*** Colby has been most recent choice.

Suggestion: Serve with Mustard Pickles.
