French Cut Chicken with Salsa



Grilled Potatoes

Garden Salsa


  1. Chicken: Heat oven to 375 degrees F.
  2. Mark chicken breast on grill, finish in oven for 20 minutes.
  3. Toss the mixed greens with 4 ounces garden salsa.
  4. Place mixed greens on a dinner plate top with chicken breast.
  5. Finish with 2 ounces of salsa and place grilled potatoes around outside of plate.
  6. Grilled Potatoes: Heat oven to 375 degrees F.
  7. Clean and butter whole potatoes, bake until soft, about 1 hour.
  8. Cut cooked potatoes in quarters, toss in oil and season with salt and pepper.
  9. Chill until ready to use.
  10. Garden Salsa: Mix vinegar and olive oil. Mix all vegetables and season.
  11. Pour liquid over vegetables, cover and store in the refrigerator until ready to use.

Yield: 1 serving chicken; 12 cups Garden Salsa
