Patria Spiced Tropical Fruit Soup
Yield: 8 to10 servings
Ingredients
- 750ml bottle Muscat wine
- 30 coriander seeds
- 15 bay leaves
- 12 cloves
- 20 black peppercorns
- 4 star anise
- 1 cinnamon stick
- 34 ounces water
- 7 ounces granulated sugar
- 5 fresh thyme sprigs
- 1 papaya, diced
- 1 mango, diced
- 1 pineapple, diced
- 1 strawberry papaya, diced
- 1 star fruit, diced
Instructions
- Combine wine, spices, water and sugar in pot. Boil for 10 minutes; remove from heat.
- Add thyme, cover and chill. Strain.
- Add diced fruit.
- Serve chilled with crystallized thyme.
