Patria Spiced Tropical Fruit Soup

Ingredients

  • 750ml bottle Muscat wine
  • 30 coriander seeds
  • 15 bay leaves
  • 12 cloves
  • 20 black peppercorns
  • 4 star anise
  • 1 cinnamon stick
  • 34 ounces water
  • 7 ounces granulated sugar
  • 5 fresh thyme sprigs
  • 1 papaya, diced
  • 1 mango, diced
  • 1 pineapple, diced
  • 1 strawberry papaya, diced
  • 1 star fruit, diced

Instructions

  1. Combine wine, spices, water and sugar in pot. Boil for 10 minutes; remove from heat.
  2. Add thyme, cover and chill. Strain.
  3. Add diced fruit.
  4. Serve chilled with crystallized thyme.

Yield: 8 to10 servings
