Piccadilly Cafeteria Carrot Bars

Ingredients

Bars

  • 1 cup granulated sugar
  • 1/4 cup applesauce
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 12 cup chopped nuts (optional)
  • 1/2 cup vegetable oil
  • 2 jars baby food carrots
  • 1 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Icing

  • 1/4 cup soft margarine
  • 1 1/2 cups powdered sugar
  • 3 ounces light cream cheese
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Lightly grease and flour a 9 x 13 inch baking pan.
  2. In a large bowl, mix all carrot bar ingredients and nuts together.
  3. Bake for 25 to 30 minutes.
  4. While bars bake, mix icing.
  5. When bars are baked, cool, spread with icing or sprinkle with powdered sugar.
  6. Cut into bars.
  7. Share with friends.
